I Kinunot, this Smorgasburg Queens Stingray Sandwich is the new Lobster Roll

Smorgasburg Queens opened last weekend with a wonderful, curated list of local food vendors assembled by Queens food expert Joe DiStefano. 

While everything was great, my absolute favorite bite of the day came from my good friends at Papa’s Kitchen in Woodside who introduced us all to the highly addictive Kinunot, or Stingray Sandwich. 

  
The PK crew prepares the dish by cooking Stingray in coconut milk, Moringa leaves and spices, and tops it with the refreshing combo of cilantro, cucumber, shredded carrots and red onion. It’s served up on a soft roll, and while it might visually suggest a Bhan Mi at first, it’s much more reminiscent of that iconic summer favorite, the Lobster Roll. 

Lobster, crab and shrimp rolls are available elsewhere at Smorgasburg Queens, but at a mere $6.95, Papa’s Kitchen’s awesome Stingray sandwich is less than half the price and in my opinion a great deal more satisfying. You heard it here first: the Stingray Sandwich is the new Lobster Roll this summer. 

Now I just have to get the cajones to try the Balut at Papa’s table.
